A bite-sized version of the traditional Japanese Ichigo Daifuku. These are small, round glutinous rice cakes (mochi) with a soft, elastic texture. Unlike the fresh version which contains a whole fruit, the “mini” shelf-stable variety features a smooth, sweet filling made from strawberry-infused white bean paste or fruit jam. They are typically dusted with a fine layer of potato starch to prevent sticking and offer a delicate balance of fruity tartness and creamy sweetness.
